Apple Beet Salad

Salads are one of my favourite things to have for lunch! They are so easy to add variation and this one especially was so bright, crunchy and wholesome!


3 Large hand fulls of mixed salad blend of your choice

1 handful of baby arugula

1 organic granny smith apple, sliced thinly

1 organic beet sliced thinly

1 cup of sprouts of your choice

1 seeded pomegranate 

1/4 cup of goat feta

1/4 cup of pine nuts


Dressing:

1/2 cup olive oil

1/3 cup of balsamic vinegar

1 tbsp of dijon mustard

1 large clove of garlic

Salt and pepper taste

Add all the ingredients in a small mason jar and shake until mixed, wait 30 minutes and then drizzle over your salad and enjoy! Stores well in the fridge.
