Dark Chocolate Truffle Balls

These babies are low in sugar, high in magnesium, fibre, healthy fat and beneficial minerals. Dark chocolate is an amazing antioxidant and a good source of cholesterol, enhancing your health in many ways. These can improve your heart health by lowering the risk of cardiovascular disease, help lower blood pressure, and can improve insulin resistance,  plus a little chocolate is always good for the soul.


INGREDIENTS


1 cup of unsweetened dark chocolate (cut into dime size chunks)

1/4 cup of organic coconut oil

3/4 cup of full fat coconut milk (1/2 can)

1 tsp of real vanilla extract

1-2 tablespoons of maple syrup to sweeten

1/4 tsp of Himalayan salt

- For coating you can use, cocoa with or without a little splash of cinnamon, crushed nuts of your choice and shredded coconut.


INSTRUCTIONS


1. In a double boiler melt coconut oil and dark chocolate chunks until smooth, stirring frequently.

2. Once smooth, add coconut milk and risk until blended.

3. Remove from heat; stir in vanilla, syrup and salt.

4. Chill for 2 hours. Using a tbsp, scoop mixture out, roll into balls and the coat with your choice of coating.

5. Re-chill the truffle balls for a minimum of 30 minutes, then you can serve, keep all uneaten truffle balls (like that happens often) in the refrigerator.
