Triple Berry Crumble

Gluten Free + Vegan Options



Ingredients


1 1/2 cups of rolled oats

1 1/2 cups of while whole wheat flour (GF-  use quinoa flour)

1/2 cup of cane sugar

3/4 cup of coconut chips

1 cup of melted coconut oil (can use butter also, but reduce to 3/4 cup)

2 1/2cups of frozen blue berries

1 cup of frozen strawberries

1/2 cup of frozen cherries

2 tbsp of corn or arrowroot starch

2 tbsp of maple syrup

1 tsp of lemon juice

1/2 tsp of cinnamon (optional)



Instructions


*Preheat oven to 350 degrees

  1. In a large mixing bowl mix together the flour, oats, sugar and coconut until well mixed

  2. Slowly drizzle 1/2 of melted coconut or butter onto the top of mixture, blend, add other half of oil and mix until well blended and evenly moist.

  3. Line a 8x8 tray with parchment paper and put all but 1.5 cups of mixture into the tray and level and press firmly. Place into oven for 20 minutes.

  4. While base is cooking add the rest of the ingredients into a medium size mixing bowl and mix until all even and there is a bit of liquid forming on the bottom of the bowl.

  5. Remove pan from oven, pour berries into the pan, sprinkle to remainder of the crumble on top of the berries

  6. Cook for an additional 45 minutes until golden brown. Let cool for 30 minutes. Serve warm or when completely cooled.
