Hearty Power Bars

Gluten Free + Vegan





Ingredients


1 cup of organic apricots

1 cups of medjool dates

2 tbsp of honey or maple sugar

1 tbsp of vanilla extract (alcohol free)

1 cup of almonds

1/2 cup of cashews

3/4 cup of shredded coconut

3/4 cup of rolled oats

1/2 cup of cranberries 

1/2 cup of gogi berries

1/4 cup of hemp hearts

1/4 chia seeds

1/2 tsp of sea salt 



Instructions


  1. In a food processor or blender add apricots, dates, sweetener of choice, and vanilla. Pulse until semi smooth. May have to scrape the side a couple times.

  2. Add all other ingredients into mixture, carefully pulsating it is still semi chunky.

  3. Line a 8 X 10 tray with parchment paper, carefully press into the tray (lightly dipping your fingers in water while pressing will stop them from sticking)

  4. Chill for 4 hours and cut into bar size of choice. I recommended the pan to be cut into 16 bars.
