Quinoa Breakfast Bowl

Serves 4



INGREDIENTS


4 cups of cooked quinoa. Can add garlic, onion, herbs or other spices of choice.

1 pack of  prosciutto (optional) 

Lay on baking sheet. Bake at 400 until crispy. Optional.

Large bunch of Swiss chard

Washed, sliced thin and lightly sautéed with coconut oil and a splash of water.

4 free range eggs, cooked sunny side up.

2 ripe avocados, sliced.

Sunflower shoots to garnish

Salt and pepper to taste

 

Place quinoa on bottom of the plate, sprinkle with crisped prosciutto, layer with greens, top with egg, and garnish with sunflower shoots. Enjoy immediately.
